Ukrainian Honey Babka
(Slightly modified for standard American baking techniques)
8 eggs
1 cup sugar
1 cup honey- warmed for 30 seconds in microwave
16 oz sour cream
2.5 cups flour (300 grams)
2 t baking powder
½ t salt
Beat eggs and sugar together until fluffy- 5-8 minutes. Stir in warmed honey and sour cream. Add dry ingredients and beat on low just until fully mixed. Bake ~30 minutes on 350. If desired, top with powdered sugar, fresh fruit, or a cream cheese frosting. Keeps well in fridge several days. Makes ~20 muffin/cupcake size portions or 1 cake.
